Does company of champions covenant reset all respawns even after leaving it?
Say I kill all the enemies in the forest of fallen giants until they won't respawn anymore. I join the company of champions, and they all now have infinite spawns. Will these enemies still be there if I then leave the covenant? I'm doing a playthrough where I'm trying to empty out all the spawns of every enemy I can, and I really don't want to have to redo all my progress if I join the covenant.

No. You have to remain member of the Company of Champions for unlimited respawns.
It also "freezes" the spawn counter. If there are 2 spawns left for one area and you farm there after joining, there will still be 2 spawns left when leaving the CoC again.

The only way to truly reset the spawns, would be to burn a Bonfire Ascetic. Unless you do that, you'll be fine.
