Mobs will despawn after you kill them 12 times. Except if you join the Champions covenant, but then your enemies get some boost defensively and offensively so carefully with that.
Fragrants are kinda rare, but there are just as many as petrified statues so keep your eyes open, remember where those statues are if you cant unpetrify one at that moment.
Pharros stones are more common items also they are farmable
Fragrant Branch - not farmable, but there are PLENTY scattered across several areas. Many of them are very easy to reach.
Pharros Lockstone - farmable from the boss that spawns infinite rats. Just keep fighting the rats until you get the desired number of stones, then homeward bone out or finish the boss off. The game gives you plenty without needing to farm, though. Most areas that require a stone only unlock items, with a couple unlocking new areas to explore.
Join Covenant of Champions and enemies spawn infinitely, including mobs that you have already despawned from normally fighting. Enemies will hit you harder and have more HP, though. You can leave the covenant at any time by talking to the cat in Majula near the house next to the giant hole. Make sure you buy that ring from the cat that reduces fall damage, btw.
