Play defensively, and make sure your equip burden is relatively low so you can maneuver better, no more than 40-50% equip burden. Less is better if you can manage it.
DO NOT FIGHT LOCKED ON. Manipulate the camera manually so you can see both of them at all times. This will make dealing with projectiles much easier. Remember, her spells are very slow so use that to your advantage. Turn the music down a little bit so you can hear when she fires, it helps with timing.
If she summons Vestaldt, you have two options, depending on her health bar. If she’s running low, avoid V, and focus on her until she is defeated. Because they are both so aggressive, you must fight patiently and wait for openings. Hit and run tactics work best in that situation.
If you get unlucky and she summons him early in the fight, it’s better to dispatch V first. Same idea as above, fight patiently, do hit and run tactics, don’t hit more than once or twice at a time. Whittle him away slowly.
Run far away from Elana to bait Velstadt, generally she stays far away. If she teleports to you, simply run away again to bait V. When he chases you down, fight him as I described above.
If applicable, make sure your vitality is at least 30, if she is killing you in two hits your HP may be on the low side.
I have a melee build, my equipment is decent, i use a Scythe with fire imbued upgraded +7
and does a lot of damage to her, Equipment load at < 70%, no slow dodging i dont need to pull up my shield since she is easy to dodge.
I switch to shield and heide's spear +10 when the skeletons show up since the spear swings faster and has a longer reach
I can take them out without lock on so i can keep an eye on the boss's attacks as well.
i got her down to 40% max
Its just when she summons Velstadt, fighting him without lock on is hard, and i if i lock on they both swing at the same time, she teleports behind me and swings, the whole lock on camera messes up

The closer you are to 70%, the worse you roll. It’s still a fast roll, but the distance gets shortened a lot. Get to 40% equip load and you will roll faster and further. You need mobility during this fight.

If it’s still too hard, come back later after some more level ups and get your weapons to +10. Use a blunt weapon, the boss is weakest to blunt.
Yes, that's a random summon. Doesn't mean that it is outside the scope of your skill to beat it, which is why I say there's no luck involved. You just have to know the fight.
As someone else said above, if she's got low health, dodge V.
Get as far from her as possible and kite V, then bait him to swing. While he's swinging, you can go and hit her.
Once he commits to an attack, you get a decent opening
apparently armor doesnt matter at all?, if i put my good armor or be naked the boss is going to kill me in 3 hits regardless, so i wore some stupid silk robes and got that mobility bonus. I also beat the dragon with these silk robes
i used one of the npc Summons, he kept Elana busy whenever she summoned velstadt, so fighting velstadt 1v1 without being bombarded with magic was manageable.
