I think From was trying to create a more "interactive" world, where the players had to watch out their environment (beyond not falling off).
The tentacle monsters are pretty cool imo. Finally something to fight that isn't a "dude in armor". But with most things "non-dude in armor" in this game, a torch trivializes them. Roll through the tar-pits with a torch out. Torches may also reveal a few hidden ledges you can drop down to

The poison spitters don’t need to be broken, that’s way too tedious. There is a specific path you can take that makes rolling to dodge them much easier. You’ll discover it with trial and error.
On the plus side, the area is very short, make sure you get the hidden bonfire behind the petrified statue! Don’t give up, skeleton!
