You can use Steam-input by enabling "XBOX Controller Configuration Support" for this game in the Steam-settings (Steam --> Settings --> Controller --> General Controller Settings). Then, when highlighting this game in your Steam-library under the big green "PLAY"-button will be a new option "Controller Configuration". There you can rebind controller buttons.
Note that the in-game button prompts are static and will not reflect any changes made.
Select the game Dark Soul 2 -> before playing go to the controls option on the right side, press A, then A, then you can change the buttons.
Example, you press the X button on the right side, and the complete controller will appear, and you press the button that you want to replace the the X. This worked perfect for me. This way you leave it more similar to Dark Soul 1.
The best thing is that in Big Picture mode you can run it with the game open with the central menu/home button on your joystick
