If Steam-Controller configuration is enabled on Steam for PlayStation controllers, highlight this game in your Steam-library and click on "Controller Configuration" on the right side under the big, green "PLAY"-button.
If it does allow you set up gyro-controls, there should by button with a stylized gyroscope-logo on it.
I think the best solution would be to set up clicky triggers and use the softpull, but I can't seem to adjust the triggers at all. There's no change in resistance as I pull the trigger, and it doesn't click on a full pull. I tried a couple options, like the HIp Fire Exclusive option, which claims it won't allow a full pull if you softpull and vice versa, but I was still having issues with it doing a full pull by accident.
I know the DualSense is supposed to have adaptive triggers, but I guess that's something that has to be built into the game itself. But I wonder if Steam wouldn't be able to access the adaptive triggers for games not designed to use them in order to set up something like a clicky trigger. So far I haven't found any way to do this, so it might not be something that's currently working in Steam.
First, something that's easy to miss is that the triggers have three different inputs: the soft pull, the full pull, and the analog input. You need to disable the analog input. By default, both the full pull and the analog are assigned to a trigger pull.
Second, the Hip Fire Exclusive won't work unless you have an output assigned to both the soft pull and full pull. Normally this wouldn't be an issue, except the gyro activation is configured under the gyro. So if you set the gyro to activate on a soft pull, the trigger doesn't realize anything is set to the soft pull. I assigned the soft pull to output a "." (a period) since I didn't want it to actually do anything, I just needed it to activate to prevent a full pull.
So now it's working. I can soft pull to use the gyro and won't have to worry about accidentally using a strong attack, or I can do a full pull to attack without turning on the gyro. I'd still rather have a clicky trigger, and this won't work so well in games where I'd want to do a full pull while using the gyro. Hopefully we get the option for clicky triggers at some point in the future.
