There's also the police. Unfortunately, waiting for a Blue Sentinel is not likely to happen in Dark Souls 2. That covenant is not nearly as active as it is in DS3. You could still try joining the Way of Blue and wearing the ring if you wanted.
If all else fails you can burn a Human Effigy at a bonfire and completely turn off co-op/invasions in that area for 30 minutes.
If you don't mind farming for Human Effigies or have someone who can drop you a bunch, you can burn them at bonfires to effectively disable multiplayer (PvP and Co-op) for 30 minutes for the area it has been burned at. The timer will freeze if you leave that area. You'll also gain this effect, when killing a boss (again, only for the area the boss is belonging to). Messages, bloodstains and player ghosts will still be visible.
2 Chaos Blades aren't too difficult to get legit at lower SM if you know what you're doing. Having 2 of these is kind of pointless anyways.
I don't think he knows what he's doing... I have almost kill him once, even with all his gear and weapons. And it was me - me, who struggles with regular monsters
