Why so high? My build is already done at like SL 110. Is it cuz everyone is doing hybrids?

Stay in the tier of 4-7 millions and thats all. Level whatever you want. Do your build like you want.
Its really $tupid stop leveling your character when the connectivity is with Soul memory and the arena completly random... The Soul level meta did in Demon's and DS1 for the connectivity... same in DS3, but here we are with SM, gad damn it....
NO ONE would have to force them to play in a way. NO ONE.
And you're mistaken about softcaps, stat growth differs in each of the games even if some caps might be the same.
DS3 quality build template, SL120 (DS1 is very similar):
44 Vgr (this stat has really weird scaling, it isn't a constant gain then a softcap, another constant gain and so on... it just gets smaller and smaller)

For a more Dex oriented build you'd drop Str by 20 and put that into Dex or something along those lines (Sharp infused weapons even continue to scale decently).
For a more Str oriented build nice-versa, probably even less Dex for more Vit for heavier armor for more Poise (Heavy infused weapons also continue to scale decently past 60, but you reach the 2h hardcap at 66 so there's less incentive to level this further which kinda balances with the fact that you really want heavy armor, but it's probably not intended by FromSoft like that, they excel at making poor balancing decisions.
Quality builds scarifice power, but can use almost every weapon at least well, even if they aren't optimal.
DS2 template:
50 Vgr
40 End
11 Vit

40 Dex
33 Adp (DS1/3 fastroll equivalent)

But it's SL172
Truth to be told, noone really does this, I just did it for a more logical comparison. Scaling in general is pretty weak in this game and only like 5 weapons even have noteworthy scaling in more than one stat and thus the general template is either 20/40 or 40/20 depending on whether you rather want to favor Str or Dex weapons. Which puts you around SL150.
I could do something similar for caster and all kinds of other ♥♥♥♥, but the point should've come across already.
