The exception is the player, but then again, the game would get a bit weir if you grew constantly. (Interesting concept for a soulslike game though, just imagine the level design options.)
It's also possible that space is somehow distorted and you see enemies as bigger than they actually are, in accordance with their power and for visual effect. This would explain being able to wear armor and use weapons that were initially used by much bigger creatures than yourself. I think we're putting more thought into this than the developers...
The actual reason was probably: Oh, this giant knight looks awesome, added to the game.
Also i consider lorewise the old knight set to be the best around,i mean,if it's still that strong after so much time that no written records exist anymore,back then it must have been a masterpiece of equipment.
Plus there's that wierd thing they do if they actually manage to break, plus they're pretty strong enemies if you underestimate them, including what they physically are.
Since Dark Souls uses template/presets that appear to factor a "race", it is obvious that Humans take on the common, small form both physically as Humans and small in the terms of the spiritual essence of Humanity.
My conclusion is that there are also variants to people like Gwyn, Giant Sentinels, etc, and that those the size around Gwyn, Artorias, Smough and Ornstein, are a type of "Lord" Race, in terms, they physically are not able to have Humanity, for they have moreso the more bigger form like Lord Gwyn, this can be supported with the large physical sizes of the Royal Princes in Dark Souls 3, while Lothric (Right one?) Is still small, this is likely due to his crippling sickness.
And then you have sizes between Giants and the Lords, which likely are a type of sub-race preset to Giants but are not fully considered so, and are likely the more rarest types of "races"
And finally Giants, which seem to have many types of varieties to their forms. It appears that Giants are relative to certain areas, Dark Souls 2's Giants are likely another variant to the Giants of Anor Londo, excluding the Giant Sentinels which boast a more Humanoid shape.
