There is 2 boss: The old dragon slayer (Ornstein v 2.0) and the Dragon rider (you need to beat him to progress, but be careful after you kill him the heide knights will became hostile and will wander on the map)
You can easily dodge the big ones, the sword/shield type is the easiest, if you bad at dodge just keep distance until he finished his moves then strike (but tbh easy to dodge them), the mace weilder can ♥♥♥♥ you up if you badly dodge him (some enemy in ds 2 tracks your movement too good imo).
You can get the ring from the chest before the dragon rider boss arena, that reduce the lost HP penalty, or you can use an effigy to regain your lost health pool. If your're out of them... that's bad. But you can became human if you use your soapstone. If somebody summons you and complete the task you will have human form again. (easier with small soapstone because you and the host just has to kill some enemy).
Yeah, you explained better than me. I only played DS1 and this, but heide knights movements are especially odd for me.
for OlD knights(the big ones), just get behind them and swing away.
if they have hammers, dont be greedy.
the game is very non linear. even more so than 1.
It is quite easy. Maybe you just suck.
There's no such thing as being "way too bad" to finish a game, especially one that is not the "niche" kind of hardcore like bullet hell games or precision platformers, you just need to get into it and get used to the different animations, stamina management and so on. But if you really want to give up, hey... you do you.
