Report a translation problem
To be honest just RUN, you have to go from ruin to ruin if you are nearby those buildings they won't spawn. If your stamina is high enough you are able to get from the start point to ruin 1 without spawning them. Ruin 1 to ruin 2 is more difficult but you can just kill them outside of it and heal back up inside if you have to. After ruin 2 you hit a bridge, when you are over it they won't follow and you can buff and heal infront of the boss gate.

Either the case, they should get staggered in a single strike after which they should be left open for long enough until you can finish them off (asuming you've got more than 40str or upgraded weapon, this shouldn't be a problem).
Just go after him, if I remember correctly there are 3 knights (if you're still not on NG+) / hollows on the path which aren't respawning. I could be wrong but I think the knight you saw is Faraam Knight who drops his set (he's not much of a trouble tho so you're all good, so long as you manage to kill him before the storm brings in Reindeers)

Regarding the twins - your best bet would be taking as many buffs as you can before starting the fight and kill one of them before the second one jumps in. Melee (back legs) is your safest bet. Also beware of the second phase (when one dies), the other one gets buffed.
As for the cats, the second one comes in at 30% HP if you are soloing him. You can save up something powerful like a spell or weapon art for when he gets low to finish him off while the second one is still leaping in.
You mentioned the reindeer charge attack, that one has really stupid hitboxes. You have to roll extremely delayed to dodge that
