Because after all, with a full randomizer, what happens if you can't progress because an item you HAVE to have is locked behind a door? Unlikely to be fair, but totally possible.
I still stand by the other points I listed. The changes the remix makes are changes I don't particularly look for. I feel that estus/other key items like Giant Souls are set in pretty good locations as is for the sake of progression.
If you enjoy the remix, use it. If you like the regular, use it.
The reason I posted this discussion is because using an item randomizer breathed new life into Ds2 for me, after having memorized almost every item location and optimized pathways through the game for specific builds.
