Unless you plan on investing in stats to match the infusion, keeping it physical will be the most reliable. However, if you do want to invest in intelligence and or faith then dark(pvp) or lightning(pve) are usually the best. Magic and fire can also be very good, but tend to run into stronger elemental resistances that reduce the damage they inflict.

Dark infusion is amazing for PvE, as well, save for the last few bosses. Just wanted to add that. If you use lightning or dark infusions, make sure you support them with the appropriate buff (dark blade or sunlight blade) because you get extra percentage of bonus damage when you buff lightning on lightning and dark on dark, respectively.

This bonus is neglegible. We're talking about literally single digit differences.

Is it? When I looked at the math for sunlight blade it actually take your full scaled damage into acount. Can be wrong but that is what I see on the math.

EDIT:
See I look at wikidot for the formula for sunlight blade and found this:

Extra damage = (TotalAR * 0.3) + 5

So I took a high level character with a lightning claymore with 203 base + 62 scaling damage.

In the formula it is:

(265*0,3)+5 = 84,5

Which means

Total damage = 235 + 265 + 84,5 (rounded up or down I don't know)

So when I tested this on a warden in Lost Bastile I hit him for 380 dmg without buff, 465 with buff on the same swing.

465 - 380 = 85

I believe the evidence is quite clear. The warden really lacks lightning res and the extra damage is rounded up. So when you say "This bonus is neglegible. We're talking about literally single digit differences." you are wrong, we are talking about dubble digits that in this case is around 32% of the weapons lightning damage in extra damage. we are even talking almost tripple didgets and this isn't neglegible.

EDIT:

Never mind. I found the issue. The more you know. The difference between mismatching damage types is 6 damage, so yeah it is kind of neglegible.

From my understanding, buffs are based on the total AR of the weapon and the only time a noticeable bonus occurs is when the weapon already has the matching elemental damage built in. For example, a dark infused Silverblack Spear or a lightning infused Heide Spear. I know the wikis all say different, but their info is sketchy at best and player testing seems to support the info I presented. I'm not sure of the actual numbers tho, so this is just to roughly demonstrate how they work.
