The Pursuer's Ultra Greatsword might seem like a strength weapon (30 str requirement) but it also requires 18 dex to be able to use it. It has A scaling in str but also c scaling in dex. I remember using it with 40 str and 40 dex and it did a lot of damage. It's slow like any greatsword but it still has a useful moveset that won't hold you back in narrow spaces (because of some attacks being slam attacks instead of swipes).
Another good candidate is the Drangleic sword which is available right after the Pursuer (even if you beat him at the early encounter). It has C scaling in str and A scaling in dex. Also a good thing about SOTFS is that from the extra Pursuers who ambush you in different parts of The Lost Bastille you will get a decent amount of twinkling titanite to upgrade it a bit.
Someone already said this but the Zwei could be a good quality weapon too. I actually haven't used it much in Dark Souls 2 believe it or not. Maybe a few times after my first playthrough a long time ago. I think I didn't bother using it (much) after that because of how they changed the R2 attacks from a slam (like in Dark Souls 1) to a poke. That really ruined it for me.
SL150 quality builds are bad. The reason: The points are just wasted, the majority of weapons doesn't scale well enough with the second stat to justify the investment.
Ultras are bad in PvP, the Zwei has very similar scaling to the Longsword (a tad better in Str), it's essentially a Str weapon anyway. The Pursuer's Ultra has even better Str scaling but the same bad Dex scaling, it's just a Str weapon with a kinda high Dex requirement.
Just go for a Dex build with the Fume Sword, Warped Sword and one of the good Katanas. Alternatively, go for a build with just the base requirements for those weapons in your OP and infuse them.
If you want to use a dagger for parrying, you don't even have a choice but to use the Parrying Dagger - like already said other daggers can only parry when they're 2h.
cant remember if it can be buffed or not.
It doesn't really have good scaling, the values are 25/55, it's kinda like a reverse Longsword scaling. The Str-scaling is really bad, you get like 15ish AR from the requirement to the softcap. 220 base dmg is pretty low, too. Tho, it DOES only weight a few units and has 150 counter. It can be buffed, btw.
Whether a weapon has high requirements or not is almost completely pointless for a quality build.
I don't even remember whether Drangleic GS and Mirrah GS have R2 combos since it's been a long time since I used them, but I'm quite sure they do...
There are plenty of Str and Dex swords to choose from.
Also did a quick RF test at 60/60 Int/Fth, 3mins duration. HP goes from 2368 to 2841, so exactly 20% more, rounded down.
Also did some Heaveny Thunder casts since you said they had a pattern, just watched the first pillar's location and spammed the cast like 20 times, well it kept being random, definitely no 3-4 rotating patterns.
Just play the ♥♥♥♥♥♥♥ game for once, maybe don't just farm the Giant Lord lmao
