If you get softbanned, your whole steam account gets banned forever, so yeah all chars.
You just use Cheat Engine, there's enough scripts out there. You'll easily find a page telling you what to do. Like, really easily.
Basically, the golden rule: DONT EVER MESS WITH SL, STATS AND SM DIRECTLY.
It's almost impossible to get softbanned if you know what you're doing, really it's just a good part of common sense, actually. Don't get story-related items like king's ring, key of the embedded and the like either.
You can drop consumable souls though, just like equipment. No need to do it offline, you can just do it online. Doesn't matter.

Dark souls 1 has no anticheat anyway so anything is more regulated, really. But the anticheat in this game is awful anyway. And awfully easy to bypass too.
The ban for disconnecting too often is an entirely different one and can be lifted by using the bone of order.
He stated CE is obvious to detect, which he is absolutely correct about. FromSoftware just didn't care enough to implement. Most likely because these techniques are platform specific. It's very easy to detect debuggers trying to attach to your process or directly watch for CheatEngine process.
The only way to get softban is to modify things in such a way that it doesn't match the server side prediction. Like say you if you change your Soul Memory to something lower, it will be pretty obvious you cheated because it's impossible to lose Soul Memory, or to modify your SL to a value that is higher then your Soul Memory, or spawning key items before activating hidden switches in the game code. Spawning soul consumables that spawn as monster drops can't be predicted by server and therefore impossible to get banned for doing.
It's not awful. You can't make a game one hundred percent cheat proof and it become time consuming if you actively try to prevent it. Obfusicating code and memory values would increase development time but only stop crackers from figuring out how to circumvent it maybe by a couple months.
Dark Soul 1 may not have cheat protection but it does have third party cheat protection made by fans. They can detect cheaters to some degree, like modified stats that don't match SL, or properties that shouldn't exist on weapons, etc.
