Should i get the smelter sword or the aged smelter sword?

No, one has Fire damage, one Magical. In general the Aged is better because it scales with a stat less.

can't you only create 1 sword from each soul? I didn't thank aged smelter soul could produce regular smelter sword?

Orange smelter demon is fire sword, blue smelter demon is magic smelter sword.
If you don't like the blue smelter's special, consider going for the moonlight greatsword instead.

I meant once you acquire 2 smelter demon souls. Which is possible in one ng playthrough.

It doesn't matter which soul you use, both work as you get a Soul of the Smelter Demon for each of the 2.

However the option to trade the Aged one is only unlocked after you've killed the blue one in that playthrough.
