The point of infusion is the 40% increase in base damage, which you get regarless of build. You can literally pick any of the elements and do just fine in most circumstances. Enemy weakness is more important than your scaling stats.
If you are in early game, it's hard to find materials for infusions. The only way is to pray to rngessus and trade with the crows in things betwixt. If you're lucky you'll get a the stone you want.
Otherwise you can buy lightning stones from the blue sentinels covenant leader and there is a firedrake stone in FoFG in the fire pit with the salamanders.
You take the stone to a certain blacksmith and he infuses your weapon.
Stones are permanent upgrade materials that stay in the weapon forever but can only be used with the help of a special blacksmith (I think McDuff and Ornifex can do that, not Lenigrast), the resins and oozes are temporary (they last 90 seconds, I think).
Also, you can't stack resins, using one while a buff is active cancels out the original buff.
Okay, thank you for clearing that up. I actually found a boss that one of the messages said was weak against fire so I guess i'll use the fire ones for that.
If building from a scratch, I think dark is the best in general for melee simply because of the Dark Weapon spell. Other elements have similar enhancement spells, but the Dark version gets 4 base casts as compared to 1 base cast for most others (pllus, it's available relatively early in the game).
About fire... aren't a lots of the enemies highly resistant to that element (aka PvE)?
