Thats the only things I had problem with
For early areas use the mace, that's a good weapon, it'll carry you through your entire playtrough if you like it.
Be Patient.
Do (mild) ragequits... a ragequit is sign you're not ready for the challenge, drink some tea or sleep on it if necessary.
starting as sorcerer might be noob-friendly, but it's worse (you're like a glass cannon)
be cautious, every single second.
don't rush to hit enemies, try to remember how they attack you.
don't use all of your stamina (green bar) or you'll be exausted and you cannot roll in emergency situations
learn roll: starting from t0 (time you press the roll button) you have an extremely limited number of invincibility frames (iframes) where you get 0 DMG.
grab a shield with high stability and damage reduction (high stability = less stamina used when blocking)
learn to lock-on enemies and circle around them: humanoid enemies can be backstabbed for great damage.
try to learn how to parry: a correct parry leaves the enemy staggered and vulnerable to ripostes (super high damage and wicked animation) either standing or when they fall back.
try to stay human as much as you can, but not consume all you effigies. you can become human also by using the white soapsign stone (and defeat the boss) or the small one (being summoned and defeat some enemies until you vanish).
summon NPCs and be summoned to get some extra help (or more flesh between your enemies and you :P)
every time you die, you lose 5% of your max HP, up to 50% (or 25% if you get the ring of binding, heide tower of flames ==> feel free to rush into suicide mode to get this ring ASAP)
you recover your lost "Max health" becoming human.
enemies, after being defeated 15 times, don't respawn anymore.
POISE (you take hit without being staggered) use armors or special rings.
stagger enemies by using Poise damage (mainly clubs, hammers) and/or special rings

*i recommend first to upg your main attack stat to 20, then vigor/endurance to 20 and vitality a bit for heavier armors so you wont "fat roll" with loaded gear. later max your main stat, a bit to Adaptability for resist, and rest in vigor because 20 is very low in later game. that atleast what i do with my knight and i consider it as optimal build., you can always reset later game.
*use your summon mark (when obtained) all the time, to help people beat bosses and farm some free souls with them so you will grow more powerful faster, you wont lose anything for dying in their world.
*dont hesitate to upgarde normal weapons early game, you will find normal upgarde materials later on in plenty.
*buy stuff from armourer in village, the more you spent the faster you get access to better armors, first one supply upgarde is: elite knight, and next alva armor. but dont expect a lot, while these slightly upgarde your defense its still heavy skill based game.
*read marks people write, often they show where are illusionary walls, hidden path, death trap. or just waste your time, but thats the part of the game.
*remember to open "illusionary wall" dont attack it you have to press A
*never attack chest until you are sure its a mimic, you will destroy treasure for good.
*while you are melee fighter you can still upgarde pyromancy, with huge fire ball its very powerfull range attack. but you will need pyromancy item + ring that allow you to equip fire ball spell, the huge fire ball spell can be obtained after defeating one boss and opening secret room after fight.
its not mandatory but quite helpful later on.
*basic combat: two handed weapons can be easier to learn than shield+weapon, with this strategy you will have to 1-2, 3 max hit anything to kill it early on.
attack only when you are sure your attack will reach target and repeat to combo after hit, dont waste your stamina for blind chains needlessly. early game opponents are very slow just come near them to aggro them, they will start their chain, then dodge away and count their attack when they finish combo, immediately counterattack. perfect your timing.
when there is group just kite them as long you can hide behind objects and narrow passages to eliminate them one by one. or just hit - run. if you see your combo wont finish off enemy is better to save a bit of stamina to roll away than take counterattack.
*im not a big fan of lock-on feature, it limits your maneuver field, so i use it rarely only when i want to be assured my attack will hit accurately.
*always upgarde your flask when you find fragment. sometime you find bone dust that can upgarde power of healing flask when burned in campfire.
*farm a bit more powerful enemies near campfire, to maximize your souls count, reset-repeat.
*have equipped only one weapon if you dont switch a lot, it will make you more swift, more weapons will increase you burden, you can always re-equip your range weapon to eliminate archers.
*dont waste your torch early on, it will get helpful later, and torches are drop-unique limited.
*choose your way, if you want to be good or evil in your playthrough, killing npcs and invading players will make you automatically evil, so you can join later evil covenants. later you can remove your "sins" but it costs.
*check strategy for bosses on yt, when you are about to give up, some are easier than you think.
*jumping in this game sucks, prepare to fall a lot :P
so far its all i can think about atm, hope it will give you some more insight.
Itll make the game harder and prevent coop.
Other than that. Wing it. DS games are the most fun when you dont know what to expect. =)

It got a few flaws and mistakes pointed out in the comments I haven't had time to fix, but should give a good start. The problem with Dark Souls is that it need a lot of knowledge before you can get good. Why Git Gud is a thing in Dark Souls as you actually have to work on getting good by understanding the mechanics.
