New games are made for younger people
Uh, kids can play strategy games too.
"just like an old guy" XD, I'm just a college student though. Not all my games are on steam and I also have a ps4. And no I don't have anything to do with the company, nor am I neccesarily defending it. You are welcome to criticise it, just like I am welcome to share my own opinions.
In that setting the newer player will still get the impression of contributing to the overall progression because there are tons of easy objectives that are nevertheless essential, sometimes it's also just a matter of luck or the order you do things. Either way you have a continuous gameplay flow that both players alternately help to advance.
This is very unique and a great fit for LEGO, this formula has other qualities too outside this context but for a single player experience with challenging gameplay it can't deliver because adding components that would enable that would break its best quality.
So asking why LEGO games are "easy" is not unlike asking why Cuphead is "difficult".
I enjoy both for very different reasons and some overlapping reasons too (primarily visuals). But I strongly suspect a LEGO game with the gameplay of Cuphead would be an utter failure in attracting an audience.
That said LEGO Worlds is different than most LEGO games, because there are many different ways to play it. My niece keeps a garden world in which she collects flowers she finds on other worlds, every single new discovery she heads back to plant it there, while cute it kinda gets annoying to watch but that's irrelevant because it's her own experience.
You want difficult? well grab your math books and let's talk some LXFML generation.
