You can though... you have the option to play online or on your own on a new world.
I doubt it'll happen though.
Check LW's loading screen before the main menu - it mutters "Connecting to Lego Worlds Server" before loading the main menu.

Okay, jokes aside, yes, it works without internet.
using a firewall, if your using windows firewall, I recently come acorss a nice program that blocks outgoing connections, its called
windows firewall control. you do have to pay to unlock it, but not much, but very good program.
