A Few Things...
Is it possible back to the pre-timeskip artwork for the Strawhats when you pick them? I really don't like Franky's, Nami's, Luffy's or Usopp's post-timeskip look and I would rather just see their original artwork. :(

Franky looks terrible and those round shoulders just look bad!

Nami doesn't wear a freaking shirt and she calls having a bra that barely fits her "fashion", jeeze...

Usopp isn't wearing what he was pre-time skip, which doesn't make any sense, since there were no shops on the "island" he was on for 2 years, so how did he even get new clothes? Plus he looks like a farmer now, IMO.

Luffy looks OK, but that frilly shirt thing is weird and I get distracted by his burn mark.

As for the other character designs:
I like how Sanji looks and how his hair is longer and a bit messier looking. Though, I find it odd how his beard is black (in this game/manga) or brown (in the anime) and yet he has blond head hair. His moustache looks super thin and I wonder how it'll develop in another timeskip (if there is one).

Zoro looks fine, but I think he could have done eith an eyepatch, since they have other obligatory pirate things down, such as a skull and crossbones flag, Sanji's mentor had peg leg, ect...

Chopper is the only one who wears MORE post-timeskip instead of the same amount of less. I have kind of the same issue with his new clothes as I do Usopp, since I don't know where he could have got them... if anything he should be wearing less than before, since the island he was on was full of half-naked people! Saying that I still think they suit him, his new hat makes him look a bit younger though.
I really like his horn point (which is sadly hardly seen :() but I don't like his new "human" point (his head looks WAY too tiny) or Kung-fu point (looks to chubby).

Brook, again, looks fine, but I don't get when he traded in his tophat for a crown, since he seemed to be so protective of the tophat in Thriller Bark. I don't enjoy his electric guitar music, since I find it obnoxious and I liked him more when he played the piano and violin.

Robin... is Robin I guess? I don't know how her powers improved so much though, since you don't see her train, unlike everyone else.

As for Sabo... I first heard post-timeskip Sabo's voice in this game and I'm surprised he didn't keep his Naruto voice! I know he's around 22, but Luffy is 19 and his voice is only a tiny bit deeper. I just think it's odd Luffy and Chopper are the only Strawhat members/allies who keeps their female VAs through the whole series. That deep voice really doesn't suit Sabo, IMO.

TL;DR read first paragraph and I think Sabo sounds weird outside of flashbacks.

You can choose a character's costume in the character select screen. Pick a character and then select Choose Costume before setting sail. In addition to the 3d model, each costume counts as pre-timeskip or post-timeskip and will affect the character's moveset and menu appearance accordingly.

I don't mean the costumes, I mean the artwork of the characters you see when you pick a character. I don't like seeing the post-timeskip looks by default.
Another thing that bugs me, is that the only arc with two stages, is the Marinefold war, even though, IMO, Impel Down could have used two stages more.

Yes, I understood what you meant. The only way to get back pre-timeskip artworks in character select is to choose a pre-timeskip costume. The artwork will also change.
Cry more.
