What to do as ERE.
Started playing ERE on hard (♥♥♥♥ legendary) and I destroyed the visigoths sooner than I planned and the Sassanids have not declard war on me yet so should I start stabilising regions and building the economy or start preparing for the north and possibly the south?

You should work on your economy first before thinking of expanding.
build up your inner cities and stack armies on your Eastern/N eastern Cities to defend against the Huns, they will swarm you.

Keep some allies if possible around you to act as a buffer between your lands and the huns.

once the huns disperse then you can advance south and north, if you dont wait you will end up in a 3 front war which makes ERE hard for most people.

Buffer kingdoms are good; I married a daughter off to Armenia and maintained friendly relations with Abasgia, Ghassanids and Axum. I've had no declaration of independance from either Nobatia or Lazica.

So I only have to worry about one front in those Eastern lands. The Garamantians and Gaetulians have remained unfriendly so i've held an army in Libia. Leaving me to concentrate most of the military in Thracia and Dardania. Really punish the Ostrogoths and Gepids from the get go, and raze the territory.

I would also say its useful to send an army over to Italia and respond with WRE otherwise they get swamped with the barbarian tribes encroaching on them. Expect Britania and all Northern Gaul to get raped :D
Build your forces up near sassanids. i ualy have about 4 stacks ther and 2 stacks to defend greece Dont play defence vs sassanids as soon as you see them fighting with another faction you want to go strait for them ignore there client states sack all there towns I usaly occupy Meshan to retrain troops then continue and sack all but last settlement then i subjugate them so there client states are now mine. rebuild your towns/replenish your armys. Sassanids will betray you pretty soon just wipe them out this time. As they wont have the surport of there client states. And now you have massive income + lots of trade options.
If you play defensive you've already lost.

Don't trust the client states though they will eventuly betray you.

I just wipe them out once they do. I have 4k income from Atropatene alone.

Noice
Sassanids declared war on me on the 10th turn, if your AI breaks and they dont declare war on you try the interest thing. at turn 150ish you should have all the cash u need.
pay off the huns
You can take out the Visigoths in turn one. Put both the nearby armies in Trimontium(the one with the gold) and combine them. The Visigoths always attack it after turn 1, since it has the gold resource(I guess). With the combined might of the two armies, you can wipe the two Visigoth stacks out almost completely and can chase the few units that they have left in turn 2.
After this build up your economy and start focusing on the east, while consolidating in the west. The Sassanids will declare war sooner or later, your best hope is that Armenia/Karlia end up on your side. I'm finding the Sassanids the hardest part atm, stuck at 410 fending off their infinite stacks. Curious to hear how you end up doing. :)
