Once in the mod, do the same thing by familiarizing with one of the smaller campaigns before moving on to the grand campaign. There's a lot to see and learn, and a grand campaign can be 150+ planets so best to work out your learning before diving deep into one of those. Both mods add so much content they're arguably a whole new game on their own and will keep you busy for quite a while.
I would describe TR and FotR as expansions to the main game. They function almost the same in GC and in-battle events but include more units(and ability's and what not) and maps. AotR is more of an overhaul to the main game and rebuilds the space/ground and GC from the ground up in a positive manner. You can sink 100s of hours against the AI in GC AofR in any of the preset campaigns from tiny 10 system maps to 'big chungus' the 110+ galaxy map with proper hyperlanes and system placement along with a built in campaign that allows you to 'play' the og star wars trilogy, cut scenes and all. I also think the ship combat is much more fun and feels better than in TR or EaWFoC.
Another thing is going to be the era that you want to play. If you want empire vs rebellion AotR is the go to. It purely covers that era. TR is better if you are interested in what happened after death star 2 goes pop. FotR is going to be for grand republic era and bring along with it all the clones and droids you'd expect. I think you'll find no mod covers all the eras the best.
Oh and ground combat sucks with a mod or without. Mods just make it a little bit better but never good. There's nothing to really be done about it, you can only polish the original turd so much.

If you want to try the Clone Wars, you can download the Remake Holdouts Faction mod, to get the separatist and republic faction into the mod. You can choose campaigns that only have these two factions, or you can play with all 5 Factions and the minor Factions.
However, as POTUS pointed out, you should try vanilla first to learn the game.
And if you get to try out the amazing Remake mod and any of the other mods mentioned here so far, then you can read a lot of info about them either on the internet wiki, or in game in the mission completed section. Most of the info is in the game.
