I've already complained about this, and I'm sure it's still on the to-do list somewhere, and we can enter numbers/quantities there at some point. ;)
if the item is craftable, You can first spawn the crafting requirements in creative mode then switch to survival to craft the ammount you want. When your're done, go back to creative mode and put the requirements on the trash.
Stacks involve the items from the list behind the "green plus" button, there are also many items that cannot be crafted.
When using the "item" console command, however, you can specify the amount of items you want to get via parameter (e.g. "item apple 1" to spawn 1 apple etc).
