You should be able to do that actually. If the dancepad is detected as a controller then you can rebind it from Options -> General -> Controller Re-mapping. Keep in mind that you might need to unplug other controllers when doing this though, since they may interfere with the dancepad. You'll only need to do this temporarily, so don't worry about plugging them back in when you're done.
The only input device that doesn't support re-mapping is the keyboard. As Finchley said, this is because we made some really stupid choices a couple of years ago that aren't easy to fix.
I honestly did not expect that answer. Time to conquer the mocap-room at university and grab some friends for this and the dancepads xD
