Ignore strength entirely. Build for durability in attributes and feats and powers.

Duel Wielding Blaster Pistols Build
For this guide, I'm assuming you want to forego using a lightsaber in favor of blaster pistols. I'm also assuming you want to duel-wield blasters

_____________________________________________________________________
The Feats you want for this build are:
  • Duel Wielding.
  • Power Shot
  • Weapon-Profficiency Blasters
For additional feats Conditioning, Toughness, and Gearhead are all good options.

NOTE: Power-Shot is better than Critical Strike or Flurry when duel-wielding any weapons besides Lightsabers. Tier 3 Power-Shot deals +20 damage per round while duel-wielding, whereas Critical-Strike and Flurry deal random damage.
____________________________________________________________________
The class combinations I recomend are:

Soldier > Jedi Guardian

Scout > Jedi Sentinel

Scout > Jedi Guardian

Soldier > Jedi Consular
____________________________________________________________________
If you play as a Scout you will have 5 feats by the time you become a Jedi at level 8. You also get 3 free feats (Implant 1, 2, and 3). The Scout has highest saving throws of any class in the game (including Jedi) and you will be able to get Repair or Computer Use.

If you play as the Soldier you will have 8 feats by the time you're a Jedi. They are the only class that can get tier 3 weapon-profficiencies (which gives you +2 damage with that weapon type).

The Scoundrel only gets 4 feats by level 8. This isn't a good class if you want to duel-wield.
___________________________________________________________________
Jedi Guardians get one more Feat than other Jedi Classes do. They also get an attack bonus based on their level (although this bonus may be hidden in-game).

Jedi Sentinels are immune to Fear, Stun, and Paralysis. Addtionally, they are the only Jedi Class that continues to develop their Skills.

Jedi Consulars get two more force powers than other jedi classes, allowing them to reach tier 3 in 5 different powers. They also have Force-Focus, which makes thier powers harder to resist.

Your Primary Attributes are:
  • Dexterity for defense and extra damage with blasters.
  • Wisdom for medpacs and force-powers.
Your Secondary Attributes are:
  • Constitution for health.
  • Intelligence for Skill-points.

Blasters is a tough build later game, Due to jedi being able to block or reflect shots back at you, but it's doable just make sure to pump tons of points in dexterity and have lots of grenades and force powers for lightsaber enemys.

Maybe this is a dumb question, but what about a blaster Jedi with Dueling instead of Dual-Wielding?

Not enough damage output I imagine

That's what I would do. The extra defense is a big deal especially in the first game. The extra attack would compliment power shot and sniper shot alot. Getting the big damage bonuses from these abilities is heavily reliant on attack modifier.
