Most weapons aren't really worth buying, neither is most armour. Some belts, gloves and headgear can be worthwhile. Really it is possible to play a perfectly satisfactory game without buying anything from any of the merchants lists. You will pick up a ton of stuff and sell most of it just to keep your inventory manageable. After you have played through once you'll know better what might be worth getting the next time you play.
Hint: the one item I would always buy is Calrissians utility belt from the store in the Jedi Enclave on Dantooine. It boosts several skills by +3, combined with other items it can significantly boost a character's skills quite early in the game.
