Once you become a jedi all future level ups are in your jedi class. Unless there is a mod that changes this (and I don't know of one) then there is no way round this.
In some cases, such as soldier to guardian, it is actually better not take all the levels you can on Taris as there is little difference between the leveling up stats for these classes - except that the guardian gets force powers at each level, so it is better to take as many levels as possible as a guardian for the extra powers.
I rarely play scoundrel so am not familiar with the free feats for that class. The ideal levelling strategy is to maximise the sneak attack feats (but remember you cannot get beyond level 8 as a scoundrel) and then probably pick sentinel as your jedi class. Sentinel gets nearly as many feats as guardian but more skill points and more force points. The force points will help you with force powers that incapacitate enemies - so your attacks then get the sneak attack bonuses, and the skill points will allow you to boost stealth (if you want it) and persuade (worthwhile).

Scoundrel is actually the best class for leveling beyond 8, as their Sneak Attack continues to level up and they gain Master Scoundrel's Luck. A level 17 Sneak Attack doing 9-54 damage combined with the high damage of a lightsaber could lead to some devastating attacks.
However, you'll be missing out on a lot of force powers. Without the defensive buffs and combined with the low health of Scoundrel, you will be a bit of a glass cannon. Sneak attack will also only work if the enemy is not attacking you. I've found that, because you are most often in front, enemies tend to focus on you. However, if you are already ranged then you are probably used to putting yourself in back where you won't be attack by melee enemies. It's also important to note that Sneak Attack only works when within 10 meters of the target. So if using blasters you'll have to make sure you aren't too far away.
I made Atton a ranged Jedi in KOTOR II and that worked out fine. Again, he was a bit fragile but when behind some melee users he could make a good support character.
