From what I've seen, the XBone version increases the draw distance a tad (barely noticable since most of the game areas are compact) and unlocks widescreen resolutions. Widescreen resolutions can also be unlocked in this version quite easily with a bit of tinkering. There are plenty of guides on it.
So the question you need to ask yourself is, "Do I even PC, bro?"

I perfer PC
Any crashes, glitches or lost saves on PC? Did you have to tweak your PC copy?
Acc. to the video, the highest resolution available on PC is 1600 x 1200 and there seems to be no controller option. Is that true for you?
On my PC copy without mods the highest resolution I could set it at seems to be at 1280 x 1024 widescreen(16:9) again with no gamepad option.
I prefer using Xbox gamepads for games like these. At least KOTOR 2 has native controller support on steam. KOTOR 1 doesn't. It is one of the reasons I am thinking of getting an Xbox copy for my Xbox One X.
It looks really great in 4K resolution(with appropriately scaled larger HUD menus and subtitles compared to the tiny ones found on PC at higher resolutions) at 60 fps with 16x anisotropic filtering, on the Xbox One X and so far I haven't encountered any major crashes and glitches which I was worried about on PC. No need to find solutions or patches to make the game playable.
The only drawbacks I have seen so far is the 4:3 aspect ratio on the Xbox One X instead of the 16:9 ratio found on PC as well as the lack of mods particularly the added Yavin Station section, but the upgraded 4K resolution and the trouble free aspect of playing the game more than made up for it in my opinion.
Really fun game and couldn't imagine how I missed playing this game all this time.
