My preference is scout/guardian because you only get 2 extra force powers as a consular (if you are lvl 8 when you become a jedi). Yes, the force powers of a consular are harder to resist but if you like cutting down your enemies with a lightsaber then guardian is more your thing. Particularly as force jump is so good at getting you close to your enemies.
Sentinel does not really offer as much as you can get all the skills starting as a scout. So it is better to go either lightsaber or force powers.
Sentinel is the way to go in Kotor 2 but not, imo, here.
Skills are much more important in Kotor 2. They allow crafting of a range of stuff. Security got fixed so bashing containers results in broken stuff, not goodies, so security matters. There is effectively no level cap so security and demolitions both get you important XP points.
Sentinel is not that far from guardian for combat early on (and by mid/late game setinel can take down any opposition at any difficulty) and the opposition do not really attack you with force powers. A sentinels free feats mean they cannot be stunned or otherwise incapacitated. You can make a case for any of the three starting classes but, whilst it may not reach the absolute heights of guardian or consular, starting as a sentinel allows you to do pretty much everything all in one package.
