how come he gets to use armor-restricted powers while wearing it? is there anything that offers even a MODICUM of protection without interfering with force powers?

1. Because the dark side is not bound by any rules. ;)

2. Apart from the +3 def jedi master robes there is only a +5 def light side only robe in the shyrack cave on Korriban and the star forge robe near the end.

if the dark side isn't bound by rules, why can't my sith lord use death field in armor that was specifically made for a sith lord who also used death field?

RPG logic, seriously...

Because balance. It's D&D 3.5 meaning you can't cast spells in armor.
