1. Try deleting the "Settings.ini" file, if you use Windows 7 this file can be found in: C:\Users\<User Name>\AppData\Roaming\LucasArts\The Secret of Monkey Island Special Edition\
2. Type this in your Windows Explorer path text input.
For Secret of Monkey Island:
%APPDATA%\LucasArts\The Secret of Monkey Island Special Edition
For Monkey Island 2:
%APPDATA%\LucasArts\Monkey Island 2 Special Edition
3. Well if a settings document is not there, then you can create one. It's a text file, so create a text file with a name of "Settings.ini" and here's some sample content for it. (This is from mine installation of Secret of Monkey Island Special Edition) :

I do not know exactly which step fixed the problem, but I completely the steps that theazurekite1 suggested as well as changing the Windows Compatibility Mode that Maarten Vander Cruyssen suggested and it FIXED THE PROBLEM. I suspect that changing the Windows Compatibility Setting to Windows 95 had the most effect, but I did create the .ini file as well (as mentioned in step 3 of theazurekite1 's directions). When I went to the %APPDATA%\LucasArts\The Secret of Monkey Island Special Edition (from Step 2), I did not see a "Setting.ini" File, so I had to create my own. I just right clicked on the directory, selected Create New (like when you make a new directory) and selected Text Document. I called the document "settings.ini" and copy/pasted the contents from Step 3.
I hope this helps anyone else who happens to have this problem! Again, I think changing the Windows Compatibility Mode to Windows 95 definitely helped because that just makes sense. This is a very old game.
My computer:
i7 4930K
GTX 1660 Ti
16 GB DDR3 RAM
1 TB WD Black m.2 SSD
Windows 10
Worked for me too, thank you.
This worked for me on Monkey Island 2 Special Edition which on Windows 11 only appears to work in Windowed Mode
THANK YOU!
Also for me the game places the Settings.ini in "%PROGRAMDATA%\LucasArts\The Secret of Monkey Island Special Edition" and not "%APPDATA%\LucasArts\The Secret of Monkey Island Special Edition".
