Report a translation problem
It can be annoying and difficult to find a master again if you decide to switch, but you can absolutely find them again, eventually. The issue is that they randomly appear throughout the city hub, and you might end up reloading the area/going into missions waiting to have them show up again. It's entirely random, and it's just up to random chance if it will be hard for you to find them again later.
However, you don't have to stress over the master system. You can pick up old masters right where you left off.
That being said, you might as well stick with a master until they are completed, just so that you don't have to bother looking for them again. Unless of course, you don't want to 100% things or you would rather pick up other moves first, then there's no reason you can't swap.
To raise their connection with you faster, bring them on missions with you as A.I. for offline PQs, and use the moves they teach you as much as you can (so long as it doesn't make you lose, that is). You get an extra bonus if you finish off an enemy using a move that your current Master taught you, and they often will comment on it as well.
For example, if you're working with Vegeta, using Galic Gun all of the time, especially as a final blow to defeat enemies, is what you want to do to progress faster. Otherwise, you can slowly finish training without worrying about using their skills or bringing them along, but it will be much slower at times.
And depending on how you feel about spoiling the progress for yourself, you might try looking up the moves Masters will give to you, and pick ones that fit your character best. Most will give a mix of Strike and Ki moves, but I feel like most of them focus on Ki Moves. It is of course harder to train with a Master that focuses on Ki if you are playing a Strike Character that isn't powerful with Ki Moves. This means you both are gaining skills that your character won't use at the time, but also will progress more slowly as it's much harder to use those skills effectively and actually confirm defeating foes with them.

Also, piccolo tells me to pratice Evil Blast, which I have used alsmost exclusively as super. Arn't like 5 hours of blasting enough?

Using their moves does make a difference but just barely, generally taking them along in PQs is the best thing you can do. Though there's 1 mentor who's quite the pain in the ass to level because he doesen't have a playable counterpart.
There's no penalty for switching masters, but you can't switch to a new one and then switch back to your old one in the same turn. You have to refresh the hub, which means doing a PQ and hoping they'll pop back up again.
Some masters can only be unlocked by fully completing a previous master. For example, Frieza will only appear once you complete your training with Ginyu.
Lord Beerus will only appear once you complete your training with Goku (need to be level 75 to train with him). So there are reasons to stick with an older master if you're trying to get something specific.
If you're having trouble completing a master, the easiest way to do this is to go to single player PQ's and bring two NPC's of your master as your partners. Doing missions with them in your party gives you a little bit more experience with your master than if you tried to do the missions without them. The exception to this is the Old Kai master for 3rd DLC, since Old Kai is not playable, and therefor the trick won't work.
