Help to a noob please

I am new to this game and got some questions.
First question can you steal from shopkeepers without aggroing them? I used wall phasing and get in and out without him seeing me, but after i finish the floor he was looking for me anyway.

Second question when you do the thief quest, he gives you money as a reward, but you are out of shopkeepers for the rest of the run. So he gives me money that i can't use, what's the point?

and some general information, does every floor has secret room and magic book guaranteed?

You probably angered him because you were wearing the stolen items. This page has a list of all the things that turn the shopkeeper hostile: https://vagante.gamepedia.com/Shops#Angering_the_Shopkeeper

You can use it for the light shrine. (fountain) Also, you don't necessarily have to give the stash to the thief, you can use it to receive a random godcursed item.

Every act has an alternate stage that can be accessed from the second level of the act.
Every regular floor has one spellbook, ruins has two and all the other alternate stages have none.

sometimes there's no spellbook in regular floors of the forest and the catacombs. the first times this happened to me i used magic mapping, thinking i missed some fake walls, but I didn't. this still happens to me fairly often actually, but I don't know if it's intentional or not.

thank you, with secret rooms i was talking about secret walls not the floors but that answer is really helpful.

Breakable walls/secret rooms are very common as well. The only stages without any breakables walls are the Forest Temple, Tower, Rift and Factory.

Is this linked page still accurate? We rob the shopkeeper in OMP, have the non-robber exit the level and get a bounty on our heads from there out, starting immediately in the next level.

Definitely still possible. Wait until the shopkeeper is coming out of the shop and enter it as soon as he is on the tile right behind the door. (inside of the shop)
