There is already a mod for this for the regular Don't Starve (extra Backpack + Extra Amulet slot), maybe it works for DST as well if you are the host?

It irritated me as well, but I've adapted and it's fine to be honest. Just carry armor with you in the inventory. When you engage something right-click the armor and the backpack gets dropped. Proceed to own mobs then pick backpack up again. Easy as pie.
