So much spoilers...
It's a Source engine limitation, unfortunately.
Source Engine Limitiation? In the Half Life games you can boost the FOV all the way up to 90. Also, who designed the tests. As some of them are WONDERFUL mapmakers apparently. Do they have other tests as well in other mods/community maps.

Also the refernces in the mod make more sense after you've played Portal 2 first.
tl;dr: play Portal 2 first!
