GOG is its own DRM-free store owned by CD Projekt (the developers of The Witcher games). Any games you get there will be standalone, however GOG has an optional client called Galaxy and any game DirectX 9 or later (or in this case, OpenGL 3) will work fine as a non-Steam shortcut with overlay support.

This would basically be a download without any kind of forced client.

GOG connect isn't working that way but the opposite, so it will allow an owner of a Steam game to also get a copy of the same game for GOG.

To make it clear, if Moss' explanation wasn't enough, GOG is like Steam, UPlay, GFWL, Origin, with the only (and big) difference that ALL games sold there are, and will always be, DRM-free. You'll be given an installer for the game you purchase, that you can download whenever you wish, save it and burn it on disc or do whatever you want with it (except of course share it with someone else), and it will allow you to reinstall your game anytime, anywhere, for a limitless amount of times.
The game will be yours forever, and they will never be able to remove your ownership of that game.
