I apologise for not getting to this thread sooner and I'm sorry to hear that you experience issues with the game HUD randomly disappearing.
Can you confirm that your PC you play the game on meets the game's system requirements[www.ubisoft.com]? Please note that an SSD storage drive is required.
If they do meet these requirements and you have the game installed on an SSD, please verify/check integrity of the game files and try again.
If this is a consistent behaviour and it's easy to reproduce, please record a short video of it happening and upload it to YouTube.
