Also, make sure you have enough levels to unlock the ability to research weapons and spells. It's level 7, which is just one level for most of the classes, I believe. And don't level up gnosis until you actually have to, since it increases everything's difficulty.
The second time I went to the door after farming the level, I moved away from the door and waited, enemies spawned, managed to land a shot on one of them, and then they teleported right next to me and one shot me. They are too op. That's is my problem, I'm too weak even after Playing the first island a couple of times. I'm not playing the first island 10 times... I already know it as the palm of my hand.

In this game you are forced to play exactly the same "little island" 15 times to have a chance to kill some dudes that are guarding a door. with the same weapon, ability and fighting the same enemies. and the rewards for wiping the island and extracting are lame af. there is no reason at all to make the game boring on purpose. this is not a roguelite, a roguelite wont make you manually quit a run and come back to the exact same layout with the exact same weapon to fight the same enemies several times. the only reason to do this is to forcefully make the game longer. im sorry but you are trading "fun" for "game lenght" in a very bad way. bye
Honestly, they're not OP, you just haven't learned how they work yet. They're Swordsmen if i remember correctly. They'll start spawning as regular enemies once you progress more and you'll see they're perfectly fine to deal with. Also, each enemy type has the same HP as you progress throughout the game, they just increase in number or have more elite spawns.
If you haven't already, research some new guns, upgrade them once to unlock their passive abilities, and explore the second map a bit instead of focusing on the first one so much (you don't HAVE to rush to open the tower). The game starts slow, which isn't great, I admit, but it picks up a lot on the second map and once you upgrade your Gnosis a bit. Also, keep in mind that leveling up your character reseeds all maps, changing the enemy, loot, trap, etc. spawns
The game has a bunch of new stuff, they just don't throw it all at you to start so you have a chance to ease yourself into it.
You're being "one-shot" by one of the most basic enemy types in the game, the Swordsman. They have two attacks. If you can't figure out how to deal with two attacks, you really don't want the game to throw the harder enemies at you.
This game does that, though? Every time you spawn into the map, enemy locations will be different. One piece of advice I will give you is to take your time clearing each enemy zone (the various skulls you see on the map) before heading to the area where you're currently stuck. Clearing an area will give you a random selectable upgrade specific to that run.
Also, you don't have to use the "exact same weapon" every time. Try researching some new weapons and figure out what works best for you. Hailstorm (a sniper rifle) basically trivializes the entire first map. You can one shot everything with it, and it's pretty fun to use, makes you feel OP. A good close range weapon like one of the shotguns will also help a lot with enemies that try to nab you in melee range, like the guys you're currently stuck on.

Not every time you go to the map, but every time you level up. Without leveling up, the enemy placement is the same, though they start roaming as soon as they spawn.
As soon as you unlock gnosis1/2 the encounter changes again. For example from 0 to 1 adds Miniboss Encounters on the map. (That's what I would call the Eye-Guy and the Captain).
So... it is exactly as you said. Just without procedural generated maps like other games.
It's a "you" issue. I finished the first Map in my second try.
Since then I use it to speed up progression of new weapons, spells and items.
Also you can later unlock for example a dungeon on the map, giving you a speed-trail for bonus loot.
There is no reason to grind the first map "15" times with the same weapons and loadout at all. Most weapons need 25 Kills to unlock lvl2, so 1 run on the starting tutorial island is enough to unlock lvl2 and take them into map 2. Dont know WHAT you are doing, but its not a game issue.
I've only unlocked the second map and not killed the "main boss" of the second map so far. But a better player might be already in the third map with ease, which is, as far as I understood, a castle full packed with enemies and encounter rich as hell.
A and dont forget the chaning Arcana Loadout which can change the playstyle every round as well.
And dont forget Calamity events randomly happen at Map 2.
So overall in short - its a you issue all alone. You expect something of the game it does not provide. Procedural generated maps and it seems you are not capable ob adjusting to the enemies, else you would not get finished 15 times by the same two swordsman. They are not strong. They are weak as hell. Wait until they charge their "shield" and jump towards you, dodge backwards, hit the sigil somewhere around them (black spotmark), finish the stunned enemy. Easy. Or just dodge the Jump and kill them without Stun...
