So it is a good place to start to see if any of them take your fancy. Might save a bit of time rather than trying to create your own from scratch.
On the other hand, learning is fun :) so when I had exactly the same question myself a way back I started by watching this: https://www.youtube.com/watch?v=J1B5ZjtYi28
Might be a little out of date now, but the information there is all still totally relevant, from an author of a number of truly excellent Rodina mods from ships to interiors all of which can be found on the Nexus.
After taking a while to learn Blender (which is a fully featured professional level 3D modeller) which is actually a pretty intuitive and pleasant program to use in spite of its complexity, I managed to make a simple replacement 3D model for the player ship and mod it into my game. At request I posted it on the Nexus, I left the blender files in if anybody wanted to tweak it or just take a look. It is called HMS Badger so if you want an example of a fairly simple and finished blender file that's something else you can look at. (it's not up to the standards that the real modders achieve mind :)
Also there's generally a lot of very helpful people around here who can help you if you get stuck with anything.
