If you want to fly without a flight plan loaded then you just don't load a flight plan and click the 'fly now' button. You can select whichever airport and aircraft you like, click the 'fly now' button and off you go. But I'm not sure this is what you're really asking for.

That is WHILE your are flying... change the arrival at another airport.
Yes but lets sort the 1st question out first.
From the main screen of FSX click the free flight link on the left hand side.
In the main window now you'll see four boxes, 1 is aircraft, 2 is location etc.
In the 2 box, click the "change" button and choose an airport location from the window that opens, by default this should put your selected aircraft on the active runway of that airport.
Click 'ok' to select the airport and then click the fly now button. That at least should start you a flight on the ground.
I'm guessing you have a flight saved as the default flight with your plane in the air and you're not selecting a location to start from to change that. But try the above and make sure you can start a flight from the ground then we can fix it so you start with the engines off etc.
Step 2: At the top right, select an airport to start at (say, identifier KJFK). On the same selection page, at the bottom right, you should have an option to select a starting position. This, by default, is "Active Runway," which is good enough.
Step 3 (optional): Select an aircraft
Step 4 (optional), go to Flight Planner and set up a route.
Step 5: Hit "Fly now"
Your flight should start on the runway at the airport you chose with the engines running. If you want to start your flight with the engines off, there's a different set of things you need to do.
If you're in the middle of a flight and want to change your destination, under default FSX ATC, you will either have to open a new IFR flightplan (one of the options in the ATC menu) or cancel IFR and fly VFR wherever you want to go (although ATC won't provide you with guidance; you'll be guiding yourself to your destination of choice).
If, on the other hand, you're not using any kind of ATC, then there's nothing stopping you from changing your mind as to what your destination is; it's up to you either way to navigate yourself to your destination.
Once you're loaded in the simulator with your cessna on some runway, shut the aircraft down (the extent of the shutdown is at your discretion, be it just the engines off or having the entire aircraft's systems turned off and the aircraft secured).
When you're satisfied with the state of your aircraft, hit left alt and select the flights menu and save your flight (or hit the semicolon key [;]). While saving your flight, make sure you hit the checkbox "make this my default flight" (or something to that effect). FSX, from then on, should start by default with that state.

Just as Amahran described above. Start a flight on a runway, we both recommmend the Cessna 172 as it's the easiest, pull the mixture lever all the way back which will stop the engine then turn at least the master switch off.
Now the engine is off either press ALT key to bring up the file menu and select to save the flight from there or you can press the ; key to open the save window.
Give your flight a name, something like EnginesOFF or whatever you like and make sure you tick the "make this flight default" box.
By ticking that box it means that all flights you start after that will have the engines off and you will either have to start the aircraft manually or with the CTRL-e shortcut.
Don't worry... I will not bother you for a month! :-)
It wasn't a stupid question, probably quite a few people will get some help from this thread so it's really helpful to all those people who don't want to post questions that you did it for them. There are many more people read these forums than post here.
It enables you start on the ground engines off in all aircraft. Just hold ctrl and press e to start
the engines.
