Could I Use a Logitech G29 Steering Wheel to Play This...?

It would be an unlikely substitute for a joystick or yoke. A steering wheel has only one input axis where you would need at least 2 axes for basic flight controls (not including rudder/yaw).

I've seen tutorials on how to use driving pedals as rudder pedals; however the actual setups use joysticks for pitch and roll control. As said above, the driving wheel has right/left axis directional control but not an axis for up/down. I did read a comment where someone was using his wheel's paddle shifters for pitch control, though he admitted it wasn't a great solution. So techically yes, you can use a Logitech Gxx racing wheel, and probably the G29 specifically.

^^This. Yes it can be done, but it sure isn't convenient. You could theoretically use rudder pedals for pitch control and a joystick for throttle and roll control. (I actually accidentally did this when I didn't understand how FSX was naming axes). Anything is possible, but not exactly practical. Instead of forcing the use of a controller which makes your life more difficult, might I recommend just using the regular keyboard commands? Those of us of a certain age remember playing MSFS (no number, no year, it was the only one) with keyboard only. It also came on 5.25" floppies. Honestly I think the experience just using a keyboard would be significantly better than trying to force the use a steering wheel controller to fly a simulated aircraft.

I'll disagree there in that I really enjoy playing with an xbox controller. But I combine it with keyboard and mouse. Not sure if you are looking to do this as a streamer for a gag, but I would laugh if I saw someone flying with a wheel.

Sorry I meant using single axis controllers like a steering wheel and paddle shifter together to make a multi-axis setup was more difficult that it was worth. Any mullt-axis control like X-Box, PS4, or other joystick type controllers make a lot more sense and makes life easier. But I'd stand by using a keyboard alone is much easier than trying to use a steering wheel controller and a shifter to fly a plane in 3 dimensions. Or I'm just really lazy.
