If you are in full screen you should not need to undock it.
Not so...
I use two monitors on both computers and both run in full screen mode. It is not even necessary to undock a panel to move it to the second screen.
I go to tail view then press Shift+1 to bring up the instrument panel, make all the settings, and move the instrument panel over to the second screen using the pointer.
This leaves the bottom half of the screen blank, so I cycle through the views back to tail view to get a proper picture.
When I move the panel it shows a blank rectangle with a thin white frame which snaps into place, full screen, on the second screen.
It is the same procedure with the GPS and Radio Stack, etc.
This also works for my nine legacy Concordes.
I use windowed mode, set to borderless fullscreen with external software such as:

(I'm sure there are plenty of free or even open source alternatives)
And then move any undocked views from the main window.
One of the advantages is that you can use any non-fsx windows seamlessly.
JJ you can still find second hand monitors at a reasonable price.
I took a look at 2deHands in Belgium for a friend who wants larger screens for some of his students who use laptops.
Three 2017 27" Samsung monitors for less than half price at €120 each or €300 for all three.
