There are a few videos on YouTube giving a basic run through of setup. The one below is a good basic example. Everyone wants different things on the stick - so that is a preference.
The joystick should be recognised by FSX automatically and should have the main flight controls working straight away (check the video to see how you find if it's recognised) To see if the control surfaces are working just start a flight in the Cessna C-172 - go to an external view - and move the stick left and right to see the ailerons on the wings move. Then move it back and forward to see the elevators in the tail section move up and down. You can use the twist portion of the stick for the rudder in the tail, but I would recommend he selects autorudder in the realism settings for now.
Get 'flaps up' and 'flaps down' programmed into the stick, to slow the aircraft for landing speed. Also put the brakes into a trigger button if it has one. I would also get the trim up and trim down on the stick if possible. Next I would consider a 'cycle view' button and a 'gear up/down button' (the latter can be done on one button) and also a button to open/close the Air traffic control window.
As I said it's all preference and you run out of buttons pretty quick. The guy in the video below chooses different things with spare buttons. It's just a case of selecting the joystick in the controller list, then highlighting the item you want to control in the control settings list, and then pressing the joystick button to map it to the stick. The joystick button number will then be listed against the chosen item.
