Might be that you didn't uninstall correctly.

And why dont dovetail games improve this simulator ? Lockheed martin's prepared is working on p3d and its good but most of people dont want to pay for expensive add-ons like me and fsx steam is good choice for consumers like me. But i dissappointed because dovetail games doesnt work for this sim anymore. I hope Gabe Newell fire them all.
Before you went and uninstalled all of those add ons you should have run a files integrity check and let steam reacquire any files that failed validation.
There's a good possibility that would have fixed your water textures issue.
Easy mistake.
Should be successful this time, as long as you run the 'Verify Integrity of Game Files' utility as soon as it's all installed.
There is no point in keeping the Windows.old folder as it has no practical value and can be very large.
The best way to remove it is NOT to attempt to delete it but to use Disk Cleanup and tick the box referring to Previous Windows Installations.
This can take a very long time...........
