QUICK LOOK:
There are NO ANIMAL THREATS on this large, rocky island & NO SHARKS in the surrounding waters; this is a 100% exploration experience!
MAJOR ATTRACTIONS
— Caves, tunnels, underwater caves & tunnels: From massive, multi-level (and inter-connected), underwater caverns to claustrophobic tunnels, new experiences can be found in every nook and cranny. For novices to experts—there's something for everyone!
— Hidden shipwrecks inside the extensive network of meandering underwater caverns, as well as in the open ocean water (shallow to deep water). NOTE: The best time to explore these giant caves is between 10:00 AM & 2:00 PM—when the water is clearest and you have the best underwater visibility. Make sure you use a dive light (flashlight / torch) to search the floors of the caverns for loot.
— Secret areas; hidden pathways.

You might also want to take a look at Skirow's "Vacation Map Pack." It consists of 6 islands. He doesn't explicitly state that there are no sharks, just that the islands are easier than they were when he originally uploaded them. So there may be fewer sharks, or no sharks at all. You'll have to test it yourself since I'm not sure.
Also, if you have the time to look through the workshop… There may be other island builders who have islands without sharks. I would direct you to them if I knew of any; unfortunately, Skirow's "Vacation Map Pack" is the only one I'm aware of.

It would be really nice if there was an option there where sharks behaved realistically. The sharks in this game are psychic and hyper-aggressive in ways that real sharks are not. The depiction here is closer to pelagic sharks that are used to very scarce food. Sharks that live in costal biomes have access to a great deal of food and are nowhere near this aggressive. Curious, yes, but they don't try to eat everything that moves.
The fact that they instantly know where you are the moment you enter the water, and respawn, just makes it ridiculous. The very early builds without respawning sharks were far better.
Honestly, the early builds of the game were just better in general.
