Though specifically, the type of orca that would be seen in-game would be the offshore orca. Which are smaller than resident and transient orca (though still much larger than other members of the dolphin family) that live in coastal waters and shallow seas.
And they are the true apex predator of the ocean. As while they usually eat fish and marine mammals, they are known to kill sharks and even whales larger than themselves(there are even reports of them taking down weakened blue whales). With sharks though, they typically kill them by latching onto their sides and swimming upside down with them. Most sharks have to move forward to draw enough oxygen through their gills. So when being held horizontally and upside down they can't get enough oxygen and eventually suffocate. Afterwhich the orcas usually eat their livers and let the rest sink to the bottom. Because they usually only eat the liver, it is believed orcas kill sharks for reasons other than food. They also kill them by striking them with their tail fluked and slamming into them. With whales they use a range of pack tactics to weaken and eventually kill them.
And as a side note, while attacks on humans have occurred in captivity, there are very few incedents of wild orcas attacking people(only one that resulted in a fatality). And are not considered a threat to humans. It is believed that it is the stresses of captivity on the mind of the orca that triggered the attacks in captivity.
Note a lot of the attacks in captivity happened while being 'ridden' or 'trained', that aside from the fact they are in captivity at all, let us compare for a moment the size of their natural habitat against the 'cages' we put them in.
Yet another creature on the planet humans could learn a lot from lol, but hey, they are only animals right?
Yes, bit of an Orca fan, started when I watched the 70’s film of the same name when I was small (if that’s at all possible to imagine lol.)

It makes me so sad to think these beautiful and magnificent creatures are kept in captivity, and in such small areas. They are born to be free if anything is. I wish none were ever caught...But no matter how far we go with regulation, there will always be some low life who has to try.
However, despite what we do to them in both captivity and the wild(look up how the fishing industry slaughters entire pods to prevent them from stealing their catch), wild orca have shown no aggression towards humans. And people swim with them every year, without fear of being attacked. Every orca attack on humans in the wild has been attributed to mis-identification. And even in captivity, it is believed that orca attacks were not malicious. But rather them trying to play, without understanding that we aren't as durable as them.
As for them being animals, by classification they are as much animals as humans are. But they are certainly not beasts that are slaves to their instincts. They are fully conscious and self-aware. They has even been a complex(and somewhat playful), and almost ritualistic, culture seen in how orca treat each other and humans. I would encourage people to look at this documentary about them:

That would be truly terrifying. You can see what they sharks do to the raft(and yes, I know this is largely a problem with their AI), imagine what an orca, who is trying to send you and your raft airborn, could do.
If they are added to the game, I would see them treating the player with curiosity but not aggression. And would possibly try to cooperate and form bonds. Though, I could see them becoming more hostile and try to play hacky sack with the player's body, if the player attacked them.
Though I don't think, in real life, an orca would behave in a violent fashion towards a human attack, unless they really felt they were under an inescapable threat. Most likely they would be confused and try to flee. So maybe having them retaliating against the player might not be good, in that regard.
