Sure it would be easy, but there is a reason why there is no map: Finding out how to orientate oneself is one of the game objectives.
I don't know which method you used for mapping, but maybe after reading this guide you won't miss an in-game map any more:

My problem isnt figurin out how to orientate miself it is mainly that my nicely drawn and detailed maps, that I make as I explore around in game, are rendered totaly useless every time I have to restart a new game for a reason or another, that is why I wish, that after finding a few required items in game your character could for exemple draw its own map in game, witsh you could bring up for reference, at any time. The one thing I wish was a bit better ingame that would make orientation easyer for me at least would be to make the little square representing your crossaire a brighter more easily distinguishable color than the very light grey it is at the moment, it is very ofter hard for me to see exactly were my aime point is, specialy in fog or underwater, prehaps a bright solid red color, or an orange color (like the paddle handle color, would make it easy to see in just about all condition).
I agree to the crosshair, it is sometimes really hard to see. But why would you have to start a new game so often? I have survived 100+ days until now without having any major problems.
At any rate, there are already some mod-type ways to map the islands you've been to. One is in this forum's mod section (it's a web save editor) and the other is a constantly running little app or something ... someone posted it some days ago, too lazy to search.
I don't know for sure of course, but I kinda doubt they'll add any serious mapping ability in the vanilla game. Seems like it would go against the "minimal UI" concept, for one, as well as what others have already said. Plus they've said they hope to support/don't mind some modding and thus some optional things may be left to mods. But who knows.
If you're just looking for a quick way to draw an accurate map, check out my Save Editor/Mapper. http://steamcommunity.com/app/313120/discussions/2/606068060831887476/
You just save your game, and load it up in there. Just don't change anything and save it if you're not looking for other cheats.
In my suggestion thead, I've posted some items for making a selfmade-map.

Could make us avaiable to make an ingame map.
If they do add colored crosshairs/cursors, PLEASE make the colors a menu choice. The current color is so the cursor is unobtrusive and does not distract from immersion.
