Best way to get on the raft? Hold space.
Leather: kill sharks and boars. They give you about 3 rawhide each which you can turn into leather.
Barrels: build them into a raft base (you can demolish it later, but how much you get back of resources depends on your building level), or remove the floor in the middle part of your raft and use that space to bring a barrel back to your island.
If you haven't already, I highly recommend farming. Especially yucca plants so you'll always have a steady supply of leaves. You can also plant aloe, pipi, the other plants, fruits and potato. Definitely plant potato.....

From your safe place, you just wait for a shark to circle you, and from a safe distance throw spears at it. Once your hunting level is up a bit, it's about 4 refined spears for 'most' sharks. If you are giant boar hunting, run into the shallow water. the giant boar (and giant crabs) don't like to go in the water usually, so you can throw spears at them from the safety of the shallow water.
Coconuts do not respawn (unless you have a specific farmable palm trees mod).
It sounds like you've just begun to build your good raft. In case you haven't discovered it yet, remember you can put container shelves on the raft--so you can make a huge barge (if you want to), to travel the world and take just about everything with you. I usually only "settle" to do a bit of farming of potatoes for fuel. Otherwise I'm a traveler. I make a larger raft, usually 3x3, and wander around.
I have literally never watered my plantations and then I learned that there's a bug causing rain to get "stuck" even if it's over and that makes water stills and plantations refill forever as if it would be raining constantly. Apparently devs just gave up and decided to end early access even if game has many bugs.
Anyway, I will now try to carry the barrels to my island, but for now I am at lv 5 crafting, and to get back 100% I need level 7...long way still. I guess I will get just one barrel out of 3 to craft the raft?
How about wooden logs? How can I carry them to my island to use with the log station? Or do I need one log station per island?
So if you are on a "I want planks" run, travel to an isle you are going to de-forest, and make the plank station there, and make planks. You can then stack planks 4 deep x 5 slots in a container, instead of just 5 logs. It's much more efficient than dragging logs back.

- Plastic water bottle - a 4 serving alternative to clay water bottle. Found randomly in loot.
- Goggles: completely unfunctional, currently only exists as a decoration in the item list.
