The water collector is faster, but it requires some work to do and an additional container...
[Edit:]
What? :D
Ok, here's the full text:
The Water Still is easier to build and to maintain, but slow. Amongst others it requires one bucket and a piece of tarp. It slowly collects condensed water over the day - shown by drop symbols - without your intervention. You can refill a coconut (one serving) or an empty water bottle (four servings) by holding it in your hand, looking at the Water Still and keeping E pressed.
The Water Collector is more effective, but also a bit more complicated. It is driven by fire and requires two containers, one of which has to be a bucket. You will have to fill the bucket with sea water (take it into your hand and go underwater) and hang it directly over the fire, i.e. put it to the lower part of the construction. A second bucket for the upper part, where the condensed fresh water is being collected, is handy, but you can also use an empty coconut there. To refill an empty coconut from the upper bucket, take the bucket away from the Water Collector and put it to the ground. You can also drink from the bucket directly (left-click while holding it).
Sorry for the confusion, recently purchased this and figuring out boiling water has been tricky heh.
